Cookies for Breakfast!

I don’t know about your kiddos, but when mine hear the word “cookies” they get excited. So when I started making breakfast cookies, I became a superhero mom. Well, at least I like to think so. Haha


This breakfast is a win win for all involved. Healthy natural ingredients, no added sugar, protein, and extremely easy to make. And did I mention, they are delicious!


If you ever have ripe or overripe bananas hanging around, then this is the perfect breakfast. Granted, you could use less ripe bananas but it will be harder to mash them and the cookies maybe more tart than sweet.


Only 6 Ingredients needed:

3 eggs

3 ripe bananas

Old Fashion Oats

Vanilla extract

Vanilla Protein Powder

Mini chocolate chips (optional)


Once you have gathered your ingredients together, preheat the oven to 350° F. Crack the eggs into a bowl and whisk. Then break the bananas into pieces and mash. You can do this in a separate bowl or same bowl as eggs. I typically use the same bowl so to not dirty another dish.













When the bananas are mashed and mixed with the eggs, add a dash of vanilla extract. Then add a scoop of vanilla protein powder. I love Momsanity protein powder because it is dairy and soy free. Plus, it comes in three flavors: vanilla, Dutch chocolate and caramel.



Typically, I do not measure the oats. Start by adding a cup of oats and add more until you get the thickness you desire. Mix all of the ingredients together well. If you want to add even more fun, then this is the time to mix in a few mini chocolate chips. I prefer using the Enjoy Life brand of chocolate chips. They are free of most known food allergens.













Spoon the mixture onto a sheet pan in 2-inch round heaps. They won't spread out while

cooking, so it's fine to place them close together on the pan. Bake for 15-18 minutes, until the tops start to brown slightly and they feel firm to touch.



Now sit back and relax. You just fixed your kiddos an easy and healthy breakfast that they will love!
